RCIA Cupcakes

I made 128 cupcakes (+ 1 giant cupcake) for our RCIA Easter Vigil Mass this year. I had chocolate frosting, buttercream frosting, white cake & chocolate cake in all possible combinations. Some were flowers and others frosting swirls. I even made some Easter baskets with green frosting grass.

Baby Shower of Roses



I helped a wonderful friend to put these together for a baby shower. I love the way it all turned out! Notice the cupcakes have white roses in buttercream with royal frosting roses in light pink.

A Crazy Lapse in Thinking

Well after the crazy weekend I had I told my husband I wouldn't be making cakes anymore and he would have to eat (gasp) store bought cake...

His reaction was clear and since it seemed to stick permanently to his face I of course quickly changed my mind!
And all of my friends and family thank me I am sure (for 2 reasons)!

1st Communion Cake for a Princess


Here is the cake from my daughters 1st Communion this past weekend. She was so cute and so excited! I was insane and made the whole thing on Sunday (the same day as 1st Communion).   I had some leftover royal frosting decorations so I used those with some buttercrream I had in the freezer. It still took me all morning (in the middle of nursing my 6 month old, getting ready for the mass, cleaning the kitchen, making sure all my girls had their clothes picked out, and feeding everyone!) WHAT WAS I THINKING!?

Belle Cake from Beauty & the Beast


I really like the way this turned out. I used a paper towel to rub on the rose design to her dress over the buttercream frosting. The inside was an almond pound cake recipe from Duncan Hines (not that impressed).  Each child got a cupcake to decorate themselves. My daughter loved her cake and I loved making her happy!

"Love Grows" Baby Shower Cake & Cupcakes


This baby shower was for guys & gals & kids too! I made my favorite chocolate cake with white-chocolate cream cheese frosting for the top tier. I used the Wilton 4 tier cupcake stand. The cupcakes had buttercream flowers on top. I also added the "Dirt Worms Cups" for the kids (of course my husband ate several himself)! The mommy-to-be loved it!

A graduation cake from last summer.  I have been off of cakes way too long...I am ready to start up again! This cake has an edible image froma local cake supply store. It was half chocolate and half vanilla with all buttercream!

This was for my daughters birthday.  It was an oreo cake with buttercream.  I used some of our disney toys as cake toppers and created the rest with frosting.  I used the Wilton doll pan to make the rock and covered it with frosting, graham cracker sand and candy rocks and octopuses.  This was one of the quickest and easiest cakes I have done (only 3 hours!).  Yes, she loved it!

Easter Cake

This was for the RCIA on the Easter Vigil.  It is my classic white cake on one side and chocolate on the other with buttercream filling & icing (served 120).  It was hard to get it even because I was working with such large sheetcakes and putting them next to each other.  It is the largest cake I have made so far.  It took about 10 hours.  It was worth it, everyone enjoyed it! :)

Baby Boy Baptism 4 Tier Cupcake Tower with Cake on Top

This was for a very precious little baby boy!  An amazing gift from God! 
The cake is White Almond Sour Cream Cake with a White Chocolate Cream Cheese filling and topped with buttercream.  The cupcakes are the same and are also filled.  There are 30 cupcakes and the top tier is a 6' 3-layer cake.  I made royal frosting decorations for the cake and the cupcakes and sprinkled them with edible glitter for a special sprakle.  I used almost 18 cups of batter and 12 cups of frosting!  Yum! :)

Extreme Chocolate Cake!

This is my chocolate cake (chocolate cake, white chocolate cream cheese filling, milk chocolate frosting) topped with dark chocolate ganche. It's 4 layers of cake made from scratch (real butter - no shortening). I made it for my friends at work...yum!

Cinnamon Rolls with Orange Cream Cheese Frosting




I used the recipe from allrecipes.com for Clone of a Cinnibon then added my own orange cream cheese frosting. SOOOOO good! The family really enjoyed brunch today!

Lion Baby Shower Cake


This was a chocolate cake with buttercream filling and frosted with milk chocolate buttercream. I decorated the cake with colored buttercream and made the lion out of fondant (my first fondant character). I added the face and hair on the lion with buttercream. I was trying to match the baby shower decorations which had strips on the bottom and a lion with a crown on top next to some palm trees.

Baby Shower Ducky Bath Cake (boy)


I used the Wilton 3 dimensional duck cake pan and set it in an "old fashioned" bath tub. I used buttercream and piping gel dyed blue and swirled it for the water. I used fondant to make the large bubbles (buttercream for the smaller ones) the faucet and the eyes. I mixed pearl dust with butter flavor for painting on the bubbles and faucet to make them iridescent looking. The cake is a marble cake inside. It took 10 cups of batter and 8 cups of frosting. There is a dowel rod down the center to hold ducky in place. I am very happy with how this cake came out! I had lots of fun (as I always do)! It is for a co-workers daughters baby shower.

Mini thank you cake


This was for a very special lady who is always so kind and thoughtful! Thank you Patty for all your help. This was a white cake with white buttercream (I used the supplies from the church dedication cake below).

7 layer 3 Tiered Church Dedication Cake


40 cups of cake batter + 30 cups of frosting + 20 hours = cake for the St. Jude Parish 50th Anniversary & Rededication. I had so much fun designing & decorating this cake (after the hard work and long hours of preparation were done). The very top tier was 3 layers (baked in 6 x 2 inch pans) of white cake with my classic buttercream. The middle tier was 2 layers (8 x 3 inch) of chocolate cake with classic buttercream. The bottom tier was 2 layers (12 x 3 inch) of white cake with classic buttercream. I made color flow frosting ahead of time (hardens like royal but with a pillow look) to make the 50 symbol and the large cross. Then I painted them in gold and dusted them with edible gold glitter. I also made all of the roses ahead of time out of buttercream and dusted them in clear rainbow glitter. For a few roses I painted them gold and added gold glitter. I wrapped gold ribbon around each tier (with packing tape attached to the back so the oil in the frosting would not affect the ribbon). I filled 4 Wilton clear columns with the same gold ribbon. I hand piped the designs on the cake in white buttercream. I inserted plastic dowel rods into each layer of cake for support (thank you Dad for cutting those for me!) Right before I put the cake together I painted the mini crosses in gold. I brought the cake to the hall in 3 pieces and assembled it on the cake table. I attached the 50 and the cross to the cake with buttercream first. Then I piped the borders in small & large beads. I attached the roses and added leaves. And of course I had a statue of St. Jude. I am really happy with how it turned out!

We made spider cupcakes (a recipe I found online) and candy apples with the children...yum! We started early on the sugar overload!

Candy Tiered Cake


It was my husbands 30th b-day this weekend. I made a tiered candy cake (he loves sugar!). The top layer was red velvet with cream cheese filling, the middle was white cake with lemon butter cream and the bottom was white cake with classic butter cream. The columns are filled with Lemonheads and Mike & Ikes. I placed fruit candy on the top and by the columns. It was a lot of fun to do and my first attempt at a tiered cake with columns. My nephew watched me decorate and said, "You are the best cake maker!" so sweet! :)

I made this for a friends 33rd birthday. It is a yellow cake with cream cheese frosting. He is a big Nebraska Huskers fan. I piped little jerseys, footballs and letter n's on the side. I finished it with a rope border.

Autumn Harvest Cupcakes


I made chocolate and vanilla cupcakes and topped with classic buttercream frosting. I topped them with candy pumpkins (bought from the grocery store). I piped leaves and vines and a few grain stalks...the kids loved them!

Flower Basket Cake



This is my home made spice cake with maple buttercream frosting.
It is so addicting! I made the flowers in royal frosting (hardens like candy) and did a basic basket weave. The cake is for a knitting group.
